Sea Monkey Installation Neutralised
I have excluded the folder where the installation (exe) file is located, but when the files are being extracted to a temp folder to initiate the software installation, Panda kills that installation process. (Sea Monkey web browser v2.48)

because the folder on which the files are extracted is not excluded, and if it is a temp folder i would not exclude that, fo rsecurity reasons
Try excluding the file itself: the exe file you are running.
This should sort the issue

My SM version number is still 2.48 and there don't seem to be any updates available, so I presume the chance to re-try or try an alternative remains in the future.

It is a problem with unknown files: the antivirus will not allow unknown files.
Issue is:
If it is an inknown file, will send it to quarantine, and you can always extract it from quarantine and replace it on its correct location.
Another thing would be detecting it as a malware... then we will erase it from this universe.
